Cinnamon, Ginger & Lime Oven Baked Ribs

Prep Time: 15 minutes
Cook Time: 3 hours

Ingredients:
·         2 to 3 tablespoons coconut oil
·         Lime juice (from 2 medium limes)
·         1 teaspoon dried cloves
·         1 tablespoon ground cinnamon
·         1.5 tablespoon ginger, minced
·         1 tablespoons salt
·         1 rack spare beef (grass-fed) ribs, uncut
Instructions:
1.    Preheat oven to 275°.
2.    In a small bowl, combine salt, cinnamon, ginger and  lime juice. Mix well.
3.    Stir in coconut oil to thicken paste.
4.    Put large sheet of foil on baking sheet. Place rack of ribs on middle of foil and fold all sides of foil upward.
5.    Push cloves into top of ribs.
6.    Slowly pour paste over ribs, making sure to cover completely.
7.    Taking edges of foil together, close and secure foil packet.
8.       Place foil packet (on sheet tray) in oven and bake for 3 hours.
